There are creations that defy time. A few ingredients, a simple but genial idea and a mastery that turns a dish into a symbol. San Domenico in Imola, a two-Michelin-starred restaurant, has written one of the most important pages of Italian haute cuisine with its iconic “Uovo in Raviolo” – a perfect balance between delicacy and technique, between history and innovation.

A thin, delicate egg pasta immersed in the softness of ricotta and spinach that encloses a melting and creamy yolk. Together with Parmesan cheese and truffle melted by hazelnut butter, it creates a unique combination of flavors: simple, yet bold tastes.

Uovo in Raviolo is the perfect synthesis of the territory, technique and flavors of San Domenico’s cuisine.

Today, that art gets a new form. SCRIBO pays tribute to this excellence with Uovo in Raviolo, a limited and numbered edition of the LA DOTTA collection. Like every edition of this collection, this one is dedicated to the celebration of our territory. A tribute to the culture, tradition and craftsmanship that make Emilia-Romagna a reference point in the world for quality and know-how.

Inspiration: our meeting with Massimiliano Mascia

The inspiration to create this new project came from our first meeting with the Chef Massimiliano Mascia. We immediately liked the idea of creating and associating one of our fountain pens with something unexpected: a dish that has made the history of Italian haute cuisine.

The idea of linking writing to such a refined and representative gastronomic experience of the territory fascinated us immediately. An unusual but perfect marriage between the gesture of writing and the art of cooking.

A fountain pen inspired by the warm and enveloping colors of this iconic dish: the fresh golden pasta, the yolk melting with mountain butter and white truffle. Each pen mark becomes an expression of the same care, precision and passion that make this dish a timeless icon.

Massimiliano Mascia: tradition and innovation

Massimiliano Mascia’s career path began when he was only 14 years old, alternating his studies with direct training in the family restaurant and enriching his experience in the best international cuisines. He honed his technique in France with Alain Ducasse, explored the organization and rhythms of catering in the United States and perfected his knowledge of raw materials in Italy.

Just as SCRIBO celebrates the art of writing through the absolute quality of its nibs and research into materials, Massimiliano Mascia cherishes and renews a legacy of technique, passion and emotion.

For him too, handwriting has a deep meaning that takes him back in time:

“My relationship with handwriting is ancestral and takes me back to my school years, when the pages of ruled notebooks guided the movements of the ballpoint pen so as not to go off the edges. Today writing is mostly digital-phones and keyboards seem to dominate over everything, but the important things, the things that really matter, the sentences of the heart, written to the people we love and care about most, are always handwritten. Thankfully, I might add.”

Founded in 1970, San Domenico revolutionized Italian gastronomy, transforming the refined cuisine of noble households into a culinary experience accessible to all. Its founder, Gianluigi Morini, envisioned a space where culinary artistry could be expressed with elegance and mastery, without compromise on quality.

Its prestige was cemented with the arrival of Nino Bergese, the legendary “Chef of kings, king of chefs”, who brought his expertise from serving the most esteemed aristocratic families. His vision and talent turned San Domenico into a benchmark for Italian and international fine dining.

Today, Massimiliano Mascia carries this legacy forward, guiding San Domenico into the future. Through his ability to innovate while honoring tradition, he continues to elevate the restaurant’s philosophy—rooted in its culinary heritage yet constantly evolving through technique and research.

Today we are launching something truly special, originally planned for a later release, LA DOTTA Frassinago and Saragozza are dedicated to the strength and unity of Bologna.

On Saturday 19th of October there was a serious flooding, right here in the heart of Bologna, leaving areas devastated and in need of complete rebuilds.

In the light of these recent events, we have moved forward this LA DOTTA launch, dedicating our two new editions to the support of rebuilding our community.

Therefore 30% of the revenues from these two editions will be donated to support Comune di Bologna in the rebuilds of our community.

The new LA DOTTA Frassinago and Saragozza fountain pens are made of diamond cast resin and produced in 219 pieces per color.

A few dozen kilometers from Bologna, in the hills separating Emilia-Romagna from Tuscany, we find the Labante Caves, one of the most impressive travertine formations in Italy, with a length of 54 meters and a drop of about 15 meters.

The caves were created by the erosive action of spring water that, over millennia, has created a fairy-tale and evocative landscape where you can admire stalactites, stalagmites, flows and pools.

In addition to their geological value, the Labante Caves are located in an area of great scenic beauty, and their dark and silent environment is capable of creating an evocative and fascinating atmosphere.

The travertine that makes them up is a sedimentary limestone that is widespread in Emilia-Romagna and in Bologna itself. In fact, travertine has been used since Roman times for the construction of numerous historic buildings in our city including, the Two Towers and the incomplete Basilica of San Petronio facade that dominates Piazza Maggiore in the city center.

Our two new LA DOTTA Labante and Travertino fountain pens are inspired by the colors, scents and settings of the caves of the same name.

LA DOTTA Labante is made in 119 pieces, handcrafted in a turquoise mother-of-pearl resin inspired by the colors of waterfalls near caves and embellished with ruthenium finishes.

LA DOTTA Travertino, also made in only 119 pieces, features for the first time “Corten” PVD metal finishes that encircle the multi-colored resin inspired by the fairy-tale landscapes found near the Labante Caves.

Wisteria (Glicine), a small climbing plant that color the city with clusters of lilac flowers, bloom in Bologna with the arrival of spring.

Native to China and Japan, wisteria was introduced into the gardens of Europe, starting with those of England, in the 18th century and soon became among the most popular and appreciated exotic plants because of their spectacular and fragrant blooms.

In the language of flowers, there are so many meanings attributed to wisteria, from beauty to sensuality. Of all the values that are associated with wisteria, we like to mention that wisteria has always been a symbol of friendship in Europe.

Precisely with friendship and a great sense of gratitude for our passionates, we decided to create a special trio of our three fountain pens FEEL, LA DOTTA and PIUMA with a bright and colorful material, inspired by the violet color of flowers, combined with the green nuances of the wisteria plant.

The towers, a symbol of wealth and power of the city, made the construction of the cistern possible, and this helped improving the lives of the citizens.

The Valverde cistern and the Neptune fountain, on the other hand, are linked by a more direct connection. The cistern collected water from the Valverde area, which was then used to feed the Neptune Fountain.

The Neptune Fountain is one of the most famous monuments in Bologna and it was built in the 16th century to celebrate the power of the city. The famous fountain has been given an affectionate and ironic nickname in the dialect of Bologna by the Bolognese people, “Al Zigant” (the Giant), and it is meant to emphasize its size and impact on the city. This nickname is due to the large size of the statue, which is 3.2 meters tall and weighs 28 tons.

Over 500 years ago Ulisse Aldrovandi was born in Bologna, a leading figure in modern science who is still considered a reference for contemporary Italian naturalists.

For the University of Bologna, he is the first scientist whose manuscripts, notes and letters are preserved: a treasure trove of information gathered by a man with a far-reaching curiosity.

Today, we owe our visual imagery of nature to Ulisse Aldrovandi and that first generation of naturalists. An imagery built on the tradition of nature illustrations, which perhaps nowhere as in Bologna saw such an extraordinary growth, and which would one day turn into the photographs and documentaries we all know.

Many of these flowers and plants studied and cataloged by Ulisse Aldrovandi can be seen today at the Botanical Garden of Bologna, which he himself founded in 1568 to provide students with a practical tool for cultivating and analyzing the plants treated during the lessons.

Nature never ceases to amaze us and every time we look at it we find a source of inspiration: our new fountain pens of LA DOTTA collection are dedicated to some of these flowers, Campanula Bononiensis and Ninfea (Water Lily).

A mother-of-pearl and iridescent lilac of the Campanula reminds us of the bell-shaped flowers, one species of which has been given a name linked to our city.

A grey/blue with lilac streaks of the Ninfea, on the other hand, reminds us of those aquatic plants with their roots anchored in the earth at the bottom of ponds that suddenly reveal their floating flowers.

Both embellished by platinum trim, the DOTTA Campanula and Ninfea are made in only 219 pieces per colour.

THE OTHER RENAISSANCE Ulisse Aldrovandi and the wonders of the world

When interviewed about his bond with the University of Bologna, Umberto Eco used the following words: “In my students’ dissertations, I often found quotes from the theses that other students were writing at the time. (…) These students wandered under the porticoes at night and went to bars to tell each other what they were studying (…). This is one of the most beautiful aspects of the University of Bologna: the taverns and the porticoes”.

Eco describes his University as an ancient institution that is, at the same time, young, because its students bring it to life by taking it outside of the buildings when they discuss their ideas over a drink or while walking under the city’s porticoes.

It is the arrival of students, attracted since 1088 by the famous Studiorum, that led to the construction of Bologna’s famous porticoes: to grant them a Domus, that is, a home, the houses’ upper floors were extended by adding balconies initially supported by wooden beams. It is still possible to see these ancient Medieval porticoes, with the irregular surfaces of their dark wood, while walking along via Mascarella or Strada Maggiore.

Over the centuries, the wood turned into stone, becoming the network of covered walkways that connects neighborhoods, shops, and people still today.

We take inspiration from the porticoes of Bologna, which embody so much history and meaning, to present our two new creations of LA DOTTA collection: Studiorum and Domus.

The special, hand-made milling on their surface follows the motifs of the raw wood used for the first porticoes, whereas their colours refer to the contrast between light and darkness that characterizes these structures after sunset.

The yellow light of the porticoes contrasts the black sky of the night while offering a safe guide home.

Its vivid, artificial color not only illuminates our steps but teases our eyes, drawing geometric shapes through the shadows of those arcades that, slowly, lead us to our destination.

Imagine a small medieval town brimming with students coming from all over Europe. They came to listen to the most enlightening minds of the time talking about brand new theories and ideas.

Imagine copies and copies of manuscripts copied countless times and then eagerly exchanged. Imagine the profile of this city changing, becoming more and more vibrant and full of experiences and people.

This city, our city, is Bologna.

Thanks to those illuminated minds, and to the expert hands that copied the texts that made them flourish, Bologna became the place where the first university in the Western world was born. Since then, the city will be called “La Dotta” (the Learned), a center of cultural excellence that still attracts students from all over the world who continue, generation after generation, to live the city and to bring it to life.

For this reason, for centuries, Bologna has been an open and welcoming place. A place that goes through you with its illustrious history and that, at the same time, allows itself to be easily traversed. Its famous porticoes are a symbol of this characteristic: they are passages that protect your way through the city, leading you to its significant spots.

We have chosen two of them to pay homage to Bologna “La Dotta” – its historical and cultural prominence – in our own way, carrying on with our productions its ancient tradition of handwriting.

Ai Colli, with its mother-of-pearl green, tells us about the beautiful landscape of the hills surrounding Bologna from the south, reminding us of their gentle lines and their bright green emerging behind the red of the city roofs.

Writing with this pen means recognising the value of free, slow, conscious thought. It means choosing words as a space for autonomy, as a gesture that belongs only to those who perform it. In a time that consumes everything quickly, Liber Paradisus invites us to pause, to leave a trace, to give shape to what is born within.

The LA DOTTA collection has its roots in the deepest soul of Bologna: that of knowledge, law and culture as a common good. It is a tribute to the city that has made intellect a daily practice, combining rigour and humanity, study and vision.

Each fountain pen in the collection tells a fragment of this identity, but Liber Paradisus represents its symbolic heart: writing as an act of freedom.

Made of ebonite, a living and noble material, Liber Paradisus stands out for its matte finish that gives a warm, deep, almost organic feel to the touch. The red version, crossed by yellow veins and embellished with gold finishes, evokes the warmth of the earth and civic passion. The blue version, streaked with red veins and platinum finishes, evokes the depth of thought, the dialogue between rigour and imagination. Two chromatic interpretations of the same principle: freedom as movement, never as stagnation.

Liber Paradisus is a collector’s item, designed to last over time, far from the fashions and urgencies of the present. It is a pen that does not demand attention but deserves it. It accompanies the writer in an ancient and ever-new gesture, transforming every word into an act of presence.
